It’s a hot summer this year. Everyone is spending as much time as they can outside. With the beautiful weather who wants to be stuck inside cooking food and heating up the house? Picnics are the perfect way to enjoy a delicious meal while enjoying spending time outside. The main meal is important, but what about dessert? Who doesn’t love a refreshing, light dessert to enjoy after playing in the yard or with family? We have three recipes that your family will love. Choose from a delicious watermelon sorbet, a berry shortcake, and a fluffy key lime pie! Here’s how you can make each dessert.

Watermelon Sorbet

Ingredients

1 c. of sugar
1 c. of water
8 c. of seedless watermelon, cubed
2 tbsp of lemon juice

Directions

  • Bring the water and sugar to boil in a small saucepan. Stir the sugar as it cooks until the sugar dissolves completely. It should be a syrup at this point. Set this to the side.
  • Puree the watermelon in batches in either a blender or a food processor. Move it to a large bowl where you can stir in the sugar syrup and the lemon juice.
  • In a 13in by 9in dish pour the mixture in, evening it out. Cover the dish and freeze for about 8 hours or until it’s firm.

Berry Shortcakes

Ingredients

2 tbsp of sugar
½ tsp of cornstarch
2 tbsp of water
2 c. of sliced strawberries
½ tsp of grated lemon zest
2 individual round sponge cakes or any other Egypt Star Bakery cake
2 c. of blueberries
Whipped topping. Optional.

Directions

  • Mix the sugar and cornstarch in a small saucepan. Stir in the water. Take 1 c. of the strawberries and mash them into the mixture.
  • Bring to a boil and cook until it thickens, stirring regularly. It should take 1 to 2 minutes. Remove front the heat and stir in the lime zest.
  • Transfer to a small bowl where you’ll cover it and refrigerate until chilled.
  • Fit the sponge cakes into the bottom of 4 wide-mouth half-pint canning jars. Trim the cakes to fit if needed.
  • In a small bowl, mix the last cup of strawberries and the blueberries. Spoon some over each of the cakes.
  • Top with the sauce and whipped cream.

Fluffy Key Lime Pie

Ingredients

¼ c. of boiling water
1 pack of sugar-free lime gelatin (0.3oz)
2 cartons of key lime yogurt (6oz)
1 carton of frozen fat-free whipped topping, thawed (8oz)
1 pie crust from Egypt Star Bakery (6oz)

Directions

  • Grab a large bowl. Add the boiling water to the gelatin and stir for 2 minutes until the gelatin has completely dissolved.
  • Whisk the yogurt into the gelatin
  • Gently fold the whipped topping in
  • Pour into the crust
  • Cover and refrigerate until it’s set. It should take about 2 hours.
