Salmon is a refreshing dish perfect for summer winding down. The meat can be a little temperamental to work with, but once you figure out the best flavors you enjoy, you’ll be cooking it over and over again. There are several ways to cook this type of fish from the skillet, to baking it in the oven, and even grilling it. In this recipe, we’re going to show you a great way to have a delectable, flavorful piece of salmon on a bagel using a slow cooker. Here’s what you’ll need!

Ingredients

  • 4 lemongrass stalks that are cut into 4-inch piece and bruised
  • 1 sliced fennel bulb (about 14oz)
  • 4 scallions halved
  • 1/3 c of water
  • 1/3 c of dry white wine
  • 1 center-cut salmon fillet with the skin on (2lbs)
  • 1 tsp of kosher salt
  • 1/2 tsp of black pepper
  • 4oz of softened cream cheese
  • 3 tbsp of sliced fresh chives
  • 3 tbsp of finely chopped radishes
  • 2 tsp of chopped fresh dill
  • 1/2 tsp of lemon zest
  • 1 1/2 tsp of fresh lemon juice
  • 4 sliced everything bagels from Egypt Star Bakery
  • 1 c of arugula
  • 1/2 c of thinly sliced red onion
  • 1/2 c of thinly sliced English cucumber
  • Parchment paper
  • 6-quart slow cooker

Directions

  1. Take a piece of parchment that’s 30×18 inches. Fold it in half lengthwise and again crosswise. This will create a 4 layer thick piece. Put the folded parchment at the bottom of the slow cooker. The ends will fold up along the side of the slow cooker.
  2. Create an even layer with half of the lemongrass, fennel, and scallions on the parchment.
  3. Next, add the water and the wine.
  4. Sprinkle the salt and pepper on the salmon fillets, and put it in the slow cooker. Add the last half of the lemongrass, fennel, and scallions on top of the salmon.
  5. Cover and cook on HIGH for 1 to 2 hours. The salmon should easily flakes with a fork.
  6. Using the corners of the parchment paper, gently lift the salmon out letting the liquid drain off and set the salmon aside. You can get rid of what’s left in the slow cooker.
  7. In a small bowl, combine the softened cream cheese, chives, radishes, dill, lemon zest, and lemon juice.
  8. Spread this mixture on the bottom halves of the everything bagels.
  9. Next divide the arugula, red onion, English cucumbers, and add it to the bagel with 8oz of the flaked salmon.
  10. Add the top half of the bagel and enjoy!
